Hello and Happy Tuesday. Is it just me or is this week dragging already?!
As some of you may know, I am an avid and addicted instagramer, posting lots of foodie photos every day. Often, I get comments for recipes on my silly snacks or little dinners that don’t make it to the blog, so I thought I’d start something new. It’s called InstaPinch recipes. Quick and easy little recipes on Instagram. (Follow me to see them as I post!)
For those of you who arents following me on Instagram (yet), I thought I’d share them here, too!
First up: my Blueberry Cobbler Smoothie
1 cup fresh or frozen blueberries, 1 small banana, 1 cup spinach, 1/4 cup almond or coconut milk, big scoop Greek yogurt, 1/4 cup oats, big dash of cinnamon. Ice optional. Blend it up and serve!
Avocado and Egg Crostini
This one’s pretty simple, but so satisfying and tasty!
Hard Boiled egg, smashed avocado, pinch of salt and dash of pepper, crushed red pepper, on a crispy whole wheat crostini. Oh yes.
Watermelon Margarita
This one is not only refreshing, sweet, and down right incredible, but it’s pretty healthy as far as cocktails go!
Place 2 cups fresh or frozen watermelon cubes in a blender with 2 ounces of tequila, juice of a lime and it’s zest, and a pinch of salt. Ice optional. Blend it up, and serve!
