Vlad’s Vampire Bites

Ah, Halloween time. Ghouls, goblins, mummies, ghosts, and of course, vampires. 

I love Halloween. It’s a chance to dress up and act silly (or scary), and of course, as usual,  the food is one of my favorite parts. I have so much fun creating and trying out Halloween themed food, and this recipe is no different.

Whether you’re throwing a Halloween party, having a Vampire movie night, or just looking for a delicious cookie recipe, Vlad’s Vampire Bites fit the bill.

These little “bite” sized cookies taste like mini pop tarts; made up of a shortbread cookie and blood red jelly filling.

They’re very simple to make. Here’s how:

Vlad’s Vampire Cookies

Makes 1 dozen

What You’ll Need:

                                                                                                                                                                                                                                 + 1/2 cup unsalted butter                             + 1 cup all purpose flour

                                                                                                                                                                                                                                 + 1/2 cup sugar                                                 + 1/8 teaspoon salt

                                                                                                                                                                                                                                 + 1 large egg                                                       + 1/4 cup red jam

                                                                                                                                                                                                                                 + 1/2 teaspoon vanilla extract

Preheat the oven to 325 degrees. In a large mixing bowl, beat together the butter and sugar until creamy. Add the egg and vanilla, mix until combined. Add in the flour and salt, and mix until thoroughly combined. Wrap up and refrigerate for at least one hour, or until the dough is firm.

Roll out the dough to 1/8 inch thick. Cut out cookie rounds.


Place about a teaspoon of jam in the center of half of the cookies.


Top with the remaining cookies, and seal the edges. Using a toothpick, poke 2 “bite” holes into the top, and place on a cookie sheet.

Bake for 10-12 minutes, or until cookies are lightly browned. For some of my cookies, the jam naturally oozed out of the holes a bit when cooking. If they don’t, you can just use a toothpick and drizzle some more jam below the holes on the cookie to give it that effect.
