Baked Sweet Potato Chips

Hello, my loves. This week I want to focus on something very important to me: Side Dishes. Am I the only one who has a heck of a time figuring out flavorful, healthy, quick sides for dinner?! It drives me crazy. (Healthy, being the key. I can come up with indulgent, high calorie sides until I’m blue in the face) I’m sick of plain brown rice, and the same old baked potatoes.

We’ve been trying to eat better and healthier lately, as we sort of fell off the wagon after the house fire. Stress, as well as being displaced from our home has thrown our eating routine way off track, and I’ve been feeling awful and sluggish lately. Not good on top of everything else.

So, I’ve been looking for things to glam up our chicken dinners we’ve been making. Some are old recipes of mine, some are new, but I hope you enjoy them as much as we do!

I want to start with my all time favorite: the sweet potato. I buy a bag of them almost every time I go to the supermarket. They’re SO good for you, they compliment a variety of different meals, and they’re very versatile. You can work with their slight sweetness and make  them even sweeter with some brown sugar or drizzle of honey, or you can balance out the sweet with some spicy cayenne or smoky cumin. One of my FAVORITE ways to eat them, however, is with a simple drizzle of olive oil, salt, and pepper. Simple, yet the flavors are so complex. Make them into potato chips, and they’re incredible! (Which is what we’re doing today!)

Baked Sweet Potato Chips

Makes about 2 cups per potato

What You’ll Need:

 + 3-4 sweet potatoes, washed thoroughly

+ 2 Tablespoons extra virgin olive oil

+ Salt and Pepper (about 1/2 teaspoon each)

Preheat oven to 400 degrees F.

Be sure to scrub the potatoes to remove any dirt and debris. I leave the skin on because I like it, but you can peel them if you prefer. Using a mandolin, slice the poatoes into thin slices.

I like to give them another rinse  to remove any extra starch, and then get them really dry. You can use a salad spinner or blot on paper towels to remove excess water.

 Line a baking sheet with tin foil, and arrange the potatoes in a single layer on the sheet. Drizzle with olive oil, and sprinkle with salt and pepper.

Bake in the preheated oven for about 20-25 minutes, turning once half way through cooking. They should get crispy and delicious!

Why Cook These From Scratch?: You can most certainly find healthy bags of sweet potato chips that are natural in the supermarket. However, they can be quite pricey. To Make this recipe, it’s cost me $2.05. To buy this amount of good quality sweet potato chips packaged in the store, it would cost you $17-$20. Talk about savings! Plus, you can customize these in any flavor you want! It’s Fresh AND Fun!!
