This week, we apinchadashians will be focusing on one thing, and one thing only; Superbowl Food!

Are you ready for some foooootbaaaaallll!?!?!?

Now, I won’t lie to you, I’m not that into football. But one thing is for sure, I LOVE the superbowl and its parties with all of the amazingly delicious finger foods and snacks. This year, we decided to have a little fun and throw our own superbowl party. We already have my brother smoking ribs in the works. He’s the master; I miss his smoked ribs all winter long, so this will be a major treat.

So, I wanted to come up with some fun treats of my own for the big day, and I’ll be sharing them all week long as I test them.

First up, is these amazing and adorable Mini Corn dog Bites. I love a good corn dog. But, in some ways, I hate the whole eating around the popsicle stick thing. Maybe that makes me weird, but if you’re like me, and completely messy, half of it falls off while you’re walking around the carnival, and what a waste of deliciousness that is!

So, what could be better than individual corn dog bites?! So delicious and addicting, not to mention quick, easy, and no frying is required! (Did I mention mess-proof?)

Here’s how to make these simple little beauties.

Mini Corn Dog Bites

Makes 24 Mini’s

What You’ll Need:

+ 1 cup yellow cornmeal
+ 1 cup all-purpose flour
+ 1 tablespoon baking powder
+ 1/2 cup granulated sugar
+ 1 teaspoon salt
+ 1 cup whole milk
+ 2 large eggs
+ 1/2 stick butter, melted
+ 1/8 cup honey

+ About 5-6 all beef hot dogs

Preheat oven to 400 degrees F.
In a large bowl, mix the cornmeal, flour, baking powder, sugar, and salt. In another bowl, whisk together the whole milk, eggs, butter, and honey. Add the wet to the dry ingredients and stir until just mixed. Add a spoonful to each mini muffin tin. Add a piece of hotdog to each. Bake for 10-15 minutes, or until the cornbread is golden brown. Serve while warm.
