Mini Southwestern Meatloaves with Chipotle BBQ Sauce


Everytime I think of meatloaf, I hear “Not Meatloaf Again!!” in the back of my head. 

How many of you uttered those very words growing up? I know I sure did, many, many times. 

But, the truth is, despite all of our tantrums and fits about no more meatloaf, the stuff can be an incredible dinner, indeed. 

Especially when you have leftovers! I had leftover chorizo burgers, grilled onions, peppers, and corn, and I just didn’t know what to do with them. *Lightbulb* Meatloaf! But, not your ordinary meatloaf, my dears. A healthy, spicy, flavorful Southwestern Meatloaf! Perfect for summer, and perfect to sneak those pesky leftovers into. 

But, the best part of these delectable little morsels…the Chipotle BBQ Sauce on top. 

Using my easy, homemade BBQ sauce recipe, and adding the smokiness and heat of some chipotles in adobo is the perfect thing for this Southwestern inspired dish!

Mini Southwestern Meatloaves

Makes 6 Mini, or 1 Loaf Pan

What You’ll Need:

+ 1 pound ground turkey

+ 1/2 pound chorizo, out of the casing

+ 1 cup breadcrumbs of your choice

+ 2 eggs

+ 1 jalapeno, diced

+ 1 small onion, minced

+ 1 bell pepper, diced

1/2 cup corn kernels

+ 1 Tablespoon chipotle in adobo, minced

+ 1 clove garlic

+ 1 teaspoon each; salt, pepper, cumin, chili powder, garlic powder

For the Topping:

+ 1 cup of My Homemade BBQ Sauce (or sauce of your choice)

+ 1 Tablespoon chipotle in adobo, minced

Combine everything but the topping in a large bowl. Mix everything really thoroughly (I reccomend using the best tool; your hands! Wear food safe gloves if you’d like). 

Firmly pack into 6 mini loaf tins or a regular sized loaf pan. 

Put in a Preheated 350 F oven and bake for 20 minutes (mini) or 30 minutes (full loaf). Combine the BBQ sauce and chipotle and brush on top of the meatloaf. Cook an additional 15 minutes for the minis or 25 minutes for a full loaf.
