Honey Oat Quick Bread

I have a serious weakness when it comes to bread. I can’t even get in the car at the supermarket without grabbing the end of that soft, crusty Italian bread to snack on.   We usually buy a few loaves of bread (mainly whole grain or whole wheat), but it either gets eaten too fast, or goes stale, and bread isn’t too cheap anymore; especially if you want the stuff that’s good for you.

I’ve always wanted to make my own bread on a regular basis, (since I DO like cooking from scratch), but anytime I’ve ever made it, it takes hours to rise and bake. Taking time to make bread is nooo problem for me, because it’s well worth it in the end. But, we don’t always have time to do that, am I right?

I’d like to introduce you to my favorite new bread (that’s healthy for you, too)! Guess how long it takes to make? 10 minutes to throw together, 45 minutes in the oven. I think I’m going to make 4 loaves at once next time. The best part: it tastes just like a loaf of bread you’d buy in the supermarket….but BETTER. Perfect for sandwiches, toast, and everything in between. I think I’m in love.

Honey Oat Quick Bread

Makes 1 loaf

What You’ll Need:

+ 1 cup oats (plus more for sprinkling)

+ 1-1/2 cups whole wheat flour

+ 1/2 cup all purpose flour

+ 2 1/2 teaspoons baking powder

+ 1/4 teaspoon baking soda

+ 1 teaspoon salt

+ 1 large egg

+ 1/4 cup vegetable oil

+ 1 cup plain yogurt

+ 1/2 cup milk

+ 1/4 cup honey

Preheat the oven to 375 degrees F. Lightly grease a loaf pan.  Combine the flours, baking powder, baking soda, oats, and salt in a large bowl. In a medium bowl, combine the egg, vegetable oil, yogurt, milk, and honey. Add to the flour mixture until combined well. Pour into the prepared cookie sheet, and sprinkle with a little more oats. Place in the preheated oven for about 45 minutes, or until golden and toothpick inserted in the center comes out clean.
