An Autumn Breakfast For Two (It’s A Date)

Last weekend we went on one last “Summer” weekend getaway to a cabin on a lake. Well, to our surprise it was freeeezing and rainy almost the whole trip. It didn’t stop us from enjoying ourselves, though. We bundled up and had nice fires in the woodstove, watched my favorite movies (LOTR for the win!), and most importantly, made a TON of delicious food!

Well, you know what they say; breakfast is the most important meal of the day! I fully believe that’s true, which is why our breakfast on vacation couldn’t be anything less than excellent! Whether it’s with Alex, my family, friends, the holidays, or just an ordinary Sunday, I like to make sure that the breakfasts I make people are extra special, with extra love.

After all, a nice hearty breakfast is sure to start the day off right!

(I know what you’re thinking; that looks like a breakfast for 6, not 2. I couldn’t agree more, perhaps we got a little carried away….)

Here we have Egg in the Hole toast (or One Eyed Jack). The perfect combination of a gorgeous runny yolk that’s already in the bread to dip in it!

To Make: Take a piece or two of toast. Cut a circle (or heart) out of the center. Lay the piece of toast in a buttered skillet over medium heat. After 2 minutes, flip the toast and crack an egg into the center. Sprinkle with salt and pepper. From this point, you can leave it as sunny side up (place a lid on top to help cook the top of the egg) or you can flip the toast again, making it an over easy egg.

Here we have gorgeous Homemade Sage Sausage Patties. Super easy to make, and packed full of amazing flavor.  I will definitely be making these again around the holidays!

Homemade Sage Sausage Patties

+ 1 pound ground pork

+ 1/4 cup buttermilk

+ 1/2 cup finely minced onion

+ 2 cloves garlic, minced

+ 1 Tablespoon fresh sage, chopped

+ 1 teaspoon salt

+ 1/2 teaspoon pepper

+ 1 teaspoons thyme

+ 1/2 teaspoon rosemary

+ 1/2 teaspoon oregano

+ 1 Tablespoon light brown sugar

+ 1/2 teaspoon red pepper flakes (optional)

Combine all of the ingredients together and form into 8 even patties. Refrigerate for at least 1 hour. To cook; fry in a pan over medium high heat for about 6 minutes per side.
