It’s the beginning of a new year, and with a new year comes resolutions. This is a time where so many of us are trying to get fit, eat better, and (try to) forget all of the terrible, but oh-so delicious foods we ate over the holidays. (No regrets! 😉 )
I’ve been feeling sluggish lately, and as much as I hated to admit it, I needed to stop with the eggs and bacon every morning (sorry, bacon), and get back to my old routine.
Well, now, I have discovered my all time favorite new breakfast! Oatmeal is always a good choice for breakfast. For a lot of us, there isn’t enough time to cook and sit down to eat it in the morning, and sorry to break it to ya, but those store bought granola bars and packets of sugar oatmeal aern’t the best for us either. They tend to be packed with unecessary amounts of sugar, artificial ingredients, and preservatives. Better than bacon, but not a real wholesome treat.
So, I created these fun, cute oatmeal bite muffins that are not only great for us busy adults, but a great treat for the kiddos too. These are gluten free, and made completely of all natural ingredients. This is a breakfast you can feel good about; and ENJOY eating!
And whats the calorie count, you may ask? *Drumroll, please* 113 calories each! That’s it! Only 1.2 grams of fat, 5 grams sugar, and there’s 5 grams of protein, 2 grams fiber.
Mixed Berry Oatmeal Bites
What You’ll Need:
+ 2 cups old fashioned oats
+ 1 and 1/2 teaspoons baking powder
+ 1/4 teaspoon salt
+ 1 egg
+ 1 egg white
+ 3/4 cup skim milk
+ 1 5oz. container of berry greek yogurt
+ 1/4 cup pure maple syrup
+ 1/2 teaspoon vanilla extract
+ 1 cup mixed berries (fresh or frozen)
Preheat the oven to 350 degrees F. Combine the oats, baking powder, and salt. Mix in all of the other ingredients until thoroughly combined. Lightly grease a 12 cup muffin tin. Scoop the oatmeal mixture into the cups, and bake in the preheated oven for 20-25 minutes, or until toothpick inserted in the center comes out clean. They should be nice and golden brown on top.
