Carrot Cake Muffins

“Ehh, what’s up doc?”

I have been on a muffin kick lately. I can’t get enough of them! With my schedule being so hectic at the moment, they’re an incredible snack on the go that not only taste amazing, but are good for you! Instead of grabbing a bag of chips or cookies that will give you energy for about 5 minutes and make you feel crummy after, take along a snack that is good for your body. You are guaranteed to have more energy and feel great, not sluggish. These muffins take about 30 minutes to make, but the recipe makes 20-24 muffins, which should easily last you and a few others all week long!

These are perfect for a healthy alternative at an Easter Brunch. They taste just like carrot cake: moist, spiced, chewy raisins, crunchy nuts. Just no frosting; but who needs it with flavorful muffins as great as these?!

The best part? These muffins are only a whopping 110 Calories EACH! Only 2 grams of fat (mostly good), 2 grams fiber, 10 grams sugar (you can lessen this), AND 3 grams of protein. Sounds like a perfect snack or breakfast on the go to me.

Guess how much a teeny piece of carrot cake has? 330 Calories, 17 grams fat, 31 grams of sugar, and 3 grams protein.

Carrot Raisin Muffins

Makes about 24

What You’ll Need:

+ 2 cups all-purpose flour (I used half whole wheat)

+ 2 teaspoons baking soda

+ 1 teaspoon cinnamon

+ 1 teaspoon powdered ginger

+ 1 cup granulated sugar (you can use less if you wish)

+ 1 cup grated carrots

+ 1/2 cup walnuts or pecans

+ 1/2 cup raisins

+ 3 eggs

+ 1 cup whole milk

Start out by preheating the oven to 350 degrees F. Add the carrots to a large bowl and add the flour. Doing this coats the carrots in flour so that they don’t all stick together in clumps in the muffins. Add the baking soda and spices. Set aside. In a medium bowl, beat the eggs and milk together.  Add the sugar and mix well. Add to the flour mixture and combine well.

Fold in the nuts and raisins. Fill prepared muffin cups 3/4 the way full. Bake in the preheated oven for about 20 minutes.
