Fresh Basil Butter

I’m going to let you all in on a little secret of mine. Now, you better listen closely, because it is truly life changing.
I have two words for you: Basil Butter. Okay, I know it sounds crazy and not all that exciting, but I swear this butter has changed the way I’ve cooked the last two weeks.

Making pizza? Glaze the crust in basil butter. Making a sandwich? Spread on a little basil butter. Making spaghetti? Slather some basil butter on ciabatta, toast it, and call it a day.

There’s just something so light, fresh, sweet, and yet savory about this basil butter. It takes food to a whole new level, and now I’m sort of mad that I didn’t make it sooner! We have a ton of fresh basil growing in our garden, so this is a brilliant way to use some of it up. I think I may make a bunch of it, and freeze it into bricks so I have a little taste of summer all winter long.

Here’s how to make it:

1/2 cup butter, softened

+ a bunch of fresh basil (really as much as you want. I did about 1/2 cup)

+ 1 or 2 cloves garlic (optional)

Place all of these wonderful ingredients in a food processor or blender. Pulse until the basil is minced and mixed into that butter perfectly. Now, you can either place it in a container and refrigerate, or you can use a piece of wax paper to form it into a log, and refrigerate. Place the butter along the center of a piece of wax paper. Place one side over the other and use your hand to shape it into a log shape. Roll it in the paper so it forms a nice, tight log shape. Twist the ends shut and refrigerate.
