If you had a St. Patrick’s Day party like we had (which was awesome by the way), you may have some extra alcohol hanging around (well…maybe not). But, I bought a bottle of cheaper whiskey for another recipe, and I won’t be drinking it any time soon, so I decided to incorporate it into these amazing cookies. Dried cranberries soaked in whiskey and baked in chewy, sweet, crisp and amazing oatmeal cookies. The whiskey just adds a slight flavor that enhances everything else in these gems.
Here’s how to make them:
Irish Oatmeal Whiskey Cookies
Makes 1 Dozen
What You’ll Need:
+ 1/4 cup Irish Whiskey
+ 1/2 cup dried cranberries
+ 1/2 cup butter, softened
+ 1/3 cup white sugar
+ 1/3 cup brown sugar
+ 1 egg
+ 1 teaspoon vanilla extract
+ 1 cup all purpose flour
+ 1/4 teaspoon salt
+ 1/2 teaspoon baking soda
+ 1 and 1/2 cups oats
+ 1/2 cup chocolate chips
+ 1/4 cup shredded flaked coconut
Preheat the oven to 350 degrees F. Combine the cherries and the whiskey in a small bowl and set aside to soak. In a stand mixer, mix the butter, sugars and egg until creamy. Add the vanilla. In a separate bowl, mix the flour, salt, baking soda. Slowly add to the wet mixture and blend until combined. Stir in the oats, chips, and coconut. Scoop the batter into balls on a greased cookie sheet, and bake in the preheated oven for about 15 minutes. Enjoy!
