I can remember the first time I went to that popular seafood restaurant. The excitement of all you can eat shrimp, nice buttery lobsters, scallops galore. Then; the basket of biscuits came out. Suddenly I didn’t have a care in the world towards those sea creatures. Who needs them when you have these glorious, fluffy, cheddary, extra garlic buttery pillows of happiness?

Am I going too far with this one? I feel like most stories I’ve heard of people’s first times there is similar. These biscuits always steal the show. Which is why they came out with a mix you can buy to make the biscuits at home! Well, I tried it once, and it just wasn’t the same.

Then I looked at the ingredient list:

Hmmm, seems to be a lot of ingredients in there that I never put in MY biscuits. I Don’t even know what half those ingredients are!

Now, I’m sure this is probably a similar mix they use in the chain restaurants. Truth be told, I haven’t been to one in years, so perhaps the biscuits aren’t the same anymore. But to me, there’s nothing better than fresh, homemade biscuits.

One thing I can assure you of, is that my copycat recipe tastes way better than the boxed mix, it’s super quick and easy too (and better for you)! Plus, did you know it’ll cost you half the price to make them from scratch?

Try it for yourself! Here’s how to make them:

Copycat Cheddar Bay Biscuits

+ 2 cups all-purpose flour

+ 1 tablespoon sugar

+ 1 tablespoon baking powder

+ 2 teaspoons garlic powder

+ 1/2 teaspoon kosher salt

+ 1/4 teaspoon cayenne pepper

+ 1 cup buttermilk

+ 1/2 cup unsalted butter, melted

+ 1 and 1/2 cups shredded sharp cheddar cheese

+ 3 tablespoons unsalted butter, melted

+ 1 tablespoon chopped fresh parsley leaves

+ 1/2 teaspoon garlic powder

Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.

In a large bowl, combine flour, sugar, baking powder, garlic powder, salt and cayenne pepper.

In another bowl, whisk together buttermilk and butter. Pour mixture over dry ingredients and stir until combined. Gently fold in cheese.

Using a 1/4-cup measuring cup, scoop the batter evenly onto the prepared baking sheet. Place into oven and bake for 10-12 minutes, or until golden brown.

For the topping, whisk together butter, parsley and garlic powder in a small bowl. Working one at a time, brush the tops of the biscuits with the butter mixture.
