…And now for something completely different. Call me crazy, but I had this really strange idea for dinner the other day. I even said to myself, “Jess, this is weird, you may be losing it a little”. But, being the stubborn, mad cook that I am, I just had to give it a go. Crisp, sweet cornbread cakes, smoky, rich bbq shredded chicken soaking in, and spicy-sweet, crunchy strawberry salsa to top it all off. The sweetness of the strawberry and corn, the bite of the onion and jalapeno. Doesn’t sound half bad now, does it?!
Well, despite my doubts, it turned out to be an amazing meal, with all of the flavor and texture components you could possibly ask for. I instantly thought of it as a great change from the typical cook out foods. Instead of burgers and dogs, why not grill up some chicken and serve this amazing, summery treat?
