One of my all time favorite things to eat in the summer is a big, smokey, tender, pulled pork sandwich from a local BBQ place. The flavor in those sandwiches just screams summer time to me, but who says you can’t enjoy it in the dreary winter months as well?

Granted, there’s nothing that can compare to some pulled pork fresh from the smoker. But, I’ve gotten pretty close to that in this recipe, you guessed it, in the slow cooker! Set it and forget it, that’s my motto of the winter. Simple, yet hearty meals that fill the belly and warm the soul.

I bought a big bone-in pork shoulder for a pretty cheap price, and this pulled pork lasted us for weeks. Soup, Sandwiches, etc. So wonderfully tender, juicy, and pulls apart just as pulled pork should.

Slow Cooker Pulled Pork

What You’ll Need:

+ Pork Shoulder (however big you want-just make sure it will fit in your slow cooker!) Mine was a bit over 5 pounds.

+ 2 Tablespoons brown sugar

+ 2 Tablespoons chili powder

+ 2 Tablespoons salt

+ 1 Tablespoon black pepper

+ 1 Tablespoon cumin

+ 1 Tablespoon black pepper

+ 1 teaspoon cinnamon

+ 1/2 cup chicken stock

+ 1/2 cup beer (or additional chicken stock)

+Lots of BBQ SAUCE!

Start by combining all of the spices. This is your dry rub. Pat the pork dry and rub the spice mixture all over. Add the beer and chicken stock to the bottom of the slow cooker, and place your dry rubbed pork in. Set your slow cooker on high and forget it….for about 6-10 hours. You’ll see some of it starting to fall apart off the bone in the slow cooker, and thats a good sign that it’s done! Take the pork out onto a cutting board, and discard the bone. Shred the meat. Serve with your favorite BBQ sauce, or try my awesome homemade version! (Click the photo below)
