Let it gooooo….Let it goooooo….

The movie, Frozen has captivated the hearts of millions of kids and adults alike in the last year, and my Niece is no exception. She is as Frozen obsessed as the next kid, and with her big 5th birthday around the corner, I knew a themed cake was totally necessary.
Of course, being on Pinterest all the time, I’ve seen a ton of different types of Frozen themed cakes. But, I wanted to make this cake different for a few reasons. First of all, as much as I love working with fondant, my family and I are not fans of the taste, and for me, taste should always come before looks with food! Secondly, my Niece has always refused to try cake (so funny, isn’t it?!), but I was determined to get her to try this one, and I didn’t want her first experience to be with anything but the best tasting chocolate cake.
Can I just say, too, that she actually TRIED the cake, without anyone pressuring her into it, and she gobbled down a whole huge slice. Major success my friends. This chocolate cake recipe is 100% Emily approved! (Pats self on back).
I instantly thought of rock candy to make Elsa’s gorgeous, tall ice castle with. Combining the blue with the clear made these lovely tiers of crystal. The best part is, this cake is easy to make, you don’t have to be great at frosting, (because the frosting should look swirly like snow), and the rock candy serves as a fun treat for guests to take home, too!
I ordered the Frozen cupcake toppers from Amazon, and although I was really surprised at how small they were, it really worked in my favor, because it makes her “castle” look that much bigger! 😉
Here’s how I made it:
(This is using a 9 X 13 inch pan, a 9 inch round pan, and an 8 inch round pan, trimmed)
+ 4 cups sugar
+ 4 cups all purpose flour
+ 1 cup unsalted butter
+ 1 cup vegetable oil
+ 1 cup water
+ 1/2 cup cocoa powder
+ 2 teaspoons baking soda
+ 1 cup buttermilk
+ 4 eggs
+ 2 teaspoons salt
+ 2 teaspoons cinnamon
+ 2 teaspoons vanilla extract
+ rock candy ( I used about 20 sticks)
Preheat the oven to 375 degrees F. Grease and flour the pans (9×13, a 9 inch round, and an 8 inch round). Melt the butter and add oil together in a medium saucepan. add the water and cocoa powder, and cook until combined and warm. Remove from heat. Combine the sugar, baking soda, and flour together, and add the warm butter mixture to it. Combine the buttermilk and eggs. Add to the cake mixture along with the cinnamon, salt, and vanilla. Mix until combined and no lumps remain. Pour evenly into the prepared pans, and place in the preheated oven. Cook for about 20 minutes, or until a toothpick inserted in the center comes out clean.
Allow to cool, and frost with your favorite frosting recipe. Mine is here.
I then added the rock candy up the layers of the cake, and placed the figurines on top.
