These little chocolately morsels are bliss. Pure. Bliss. I can promise you that these are not your typical “healthy” snack that tastes like cardboard. To me, it’s like having one of those decadent chocolate “turtles” with caramel and nuts. They’re crunchy, sweet, tarte, with a little chewyness from the dried cranberries. I don’t even eat them because they’re healthy anymore. I eat them because they’re just THAT good. I crave them. Well, they’re a good snack to crave, because they’re made of all natural ingredients, about the size of a golf ball, and only about 50 calories each! They’re also quite satisfying. I can eat A LOT, trust me, but 2 of these fill me up. I like to pack one or two of these when I leave the house as a nice little mid day snack. If you’re in a pinch, they’re also great post workout, because they’ve got a great source of protein to help rebuild those muscles. These take very little time to make, and you can store them in the refrigerator or freezer and they will last a super long time! You can also try lots of different combinations with these. As long as you have chocolate, the combination of dried fruits and nuts are endless! Give them a try, you will not be sorry!
Cranberry Chocolate Almond Bites
Makes about 15
What You’ll Need:
+ 2 cups dark chocolate
+ about 30 almonds, salted or unsalted
+ 1/2 cup dried cranberries
Melt your chocolate, either in a double boiler over low heat, or in the microwave (but only cook for about 40 seconds at a time, stirring in between). Set out a baking sheet lined with parchment paper. Smooth on a spoonful of chocolate (about the width of a golf ball, but not too thick), and top with 2 almonds and a few cranberries. Drizzle with a little more chocolate. Repeat this process until all of your bites are assembled. Place in the refrigerator until hardened, and enjoy!
