Almond Joy Granola

So, I was strolling through the supermarket the other day, looking for some granola; and boy, did I ever find it! But, my goodness has it gotten expensive! As soon as I saw that big price tag on the little box, I said to myself “Jess, we can make this, and fill it with things WE like”.

Granola, after all, is a very easy thing to make. It will seem like you’re spending a lot more money on the individual ingredients, but you can make 20x the granola for the same price as that tiny, half filled box on the store shelf.

My favorite part of cooking is getting creative with recipes. Think of your favorite sweet treats. Now, how could you incorporate those flavors into a healthy granola? See, isn’t this fun?

One of my all time favorites are Almond Joys. Mmmmm, I could eat 10 in a sitting. So, I incorporated almonds, cocoa, coconut, and some other ingredients to make the tastiest treat of granola I’ve had to date. Top it on some yogurt, in a bowl with milk, or eat it by the handful. It’s a quick, on the go snack that’s sure to keep you full, happy, and satisfied.

Almond Joy Granola

Makes about 8 cups

What You’ll Need:

+ 4 cups oats

+ 1- 1/2 cups shredded coconut

+ 1 cup silvered almonds

+ 1/2 cup flax seeds

+ 1/2 cup cocoa powder

+ 1/2 cup coconut oil, melted

+ 1 teaspoon vanilla extract

+ 1/2 cup maple syrup

+ 1/4 cup dark chocolate chips

Preheat the oven to 325 degrees F. Combine the oats, coconut, almonds, and flax seeds together in a large bowl.

In a medium-sized bowl, combine the coconut oil, cocoa powder, vanilla extract, and maple syrup. Pour over the oats mixture and stir until everything is coated and combined.

Lightly grease a baking sheet with some more coconut oil, and spread the mixture out in an even layer.

Bake in the preheated oven for 15 minutes. Remove, stir, and put back into the oven for an additional 15 minutes. Take the baking sheet out of the oven and allow to cool completely. Don’t mix or touch the granola until it’s cooled!! (that’s how we form those yummy granola clumps).

Stir in the chocolate chips when cooled and store in an airtight container.
