I have a really special one for you guys today. An invention (more like happy accident) that I guess you could say, makes me a genius….muhahaha *pats self on back*
All joking aside, this recipe is one that I will continue making for a very long time.
I wanted to make pancakes for breakfast one morning (because really, who doesn’t love pancakes). But, I opened the cupboard, and there was no flour. What’s a girl to do? I guess you could say I had more of a craving for maple syrup, so with my eggs already cracked in a bowl, I thought, what would a sweet omlette type of cake be like? So I mashed banana, and a little cinnamon in the bowl, and the rest is history.
You would honestly never know that these were flourless, let alone healthy. My Mom follows a gluten free diet, so I made a batch for her one weekend. She LOVED them, and she usually isn’t a big fan of the gluten free recipes we try out.
A protein packed, sweet tooth cravin’, light and fluffy, delectable little treat.

3 Ingredient Banana Pancakes
2 SERVINGS (ABOUT 3 PANCAKES EACH)
What You’ll Need:
+ 2 Ripe Bananas
+ 4 Eggs
+ 1/2 teaspoon cinnamon
+ 1/2 teaspoon vanilla extract (optional. That’d make it 4 ingredients!)
Mash and whisk everything together in a bowl. Heat a pan over medium high heat, and add a drizzle of oil (I like coconut oil).
Ladle 1/4 cup batter like you would a pancake. Cook about 3 minutes per side. Repeat with remaining batter.
