Cinnamon Roll Cookies (12 Days of Cookies)

I can’t even believe how quickly Christmas is coming! Time has been flying by, and I realized the other day that I have hardly done ANY baking.

Baking is a major part of the holiday season for me. I like to pop on some Christmas music, get out the mixer, and bake up a storm. There’s nothing like the wonderful smells of Christmas cookies wafting out of the kitchen. It just sets an amazing mood to the whole house.

That being said, I’ve decided to get my act in gear and do something a little fun and different for you guys: The 12 Days of Christmas Cookies. 12 of my all time favorite cookie recipes that I make every Christmas.

To start it off, I made my ultimate favorites: Cinnamon Roll Cookies. All of the incredible flavors of a cinnamon roll in a perfect little cookie. They are always a huge hit, and dissapear faster than I can bake them!

Here’s how to make them:

Cinnamon Roll Cookies

Makes 2 dozen

What You’ll Need:

+ 1 and 1/2 sticks of unsalted butter, softened

+ 1 cup granulated sugar

+ 2 large eggs

+ 1 teaspoon vanilla extract

+ 2 and 1/2 cups all purpose flour

+ 1 teaspoon baking powder

+ 1/2 teaspoon salt

For the Filling:

+ 1/2 cup brown sugar

+ 1 Tablespoon ground cinnamon

+ 2 Tablespoons melted butter

For the Glaze:

+ 1/4 cup powdered sugar

+ 1 Tablespoon milk

Cream the butter and sugar together, adding an egg in at a time. Add in the vanilla. Mix until thoroughly combined. In a separate bowl, combine the flour, baking powder, and salt. Add in 1/2 cup of the flour mixture at a time, until fully incorporated. Flatten the dough into a disc and wrap in plastic wrap. Place in the refrigerator for at least an hour.

Once firm and chilled, roll the dough out into a thin, large rectangle, about 1/8 inch thick. Combine the brown sugar and cinnamon, and sprinkle all over the top of the dough. Drizzle the melted butter on top. starting from one end, tightly roll the dough up like you would a cinnamon roll dough. Wrap back in plastic wrap and refrigerate another hour or so.

Preheat the oven to 350 degrees F. Slice 1/2 inch rounds from the log to make the cookies and place on a lightly greased cookie sheet. Bake for 10-12 minutes, or until slightly golden on the edges.

Place on a wire rack and allow to cool. Meanwhile, make the glaze by combining the powdered sugar and milk. Once cool, drizzle the glaze on top of the cookies, and serve!
