American Pie

…..and they were singin’ Bye, Bye, Miss American Pie….

Alright, alright, song and dance over. The song gets stuck in my head everytime I look at this beautiful pie.

(I’m totally going to be one of those Mothers that sings and dances in public and embarresses the kids. I can tell already.)

This pie just screams American pride, and although it may look intricate and difficult to assemble, it’s super simple, and very impressive.

It doesn’t taste half bad either. (Just kidding, it’s incredible!)

American Pie

What You’ll Need:

+ 2 (9inch) pie crusts. I always use my trusty Homemade Pie Crust recipe

+ 1 pint blueberries

+ 18 oz. Strawberries, sliced

+ 1 cup sugar, divided

+ 1/4 cup flour, divided

+ 1 Tablespoon lemon juice

+ 1/2 teaspoon cinnamon

Preheat oven to 425 F. Take 2 large bowls. Place  3/4 cup sugar in one, and 1/4 cup in the other. Place 1/8 cup flour in each bowl and combine. Now, add the sliced strawberries to the bowl with more sugar, and the blueberries to the other. Stir each seperately to coat all of the berries. Sprinkle 1/2 Tablespoon of lemon juice in each bowl, and the cinnamon over the blueberries. Stir to combine. Now, you should have one of your pie crusts in the pie tin as the bottom of the pie. Take a piece of cardboard covered in tin foil and make an L shape for the left top quarter of the pie. This helps keep the berries seperated while pouring them in. Pour the strawberries into the larger section of pie and blueberries in the top left corner. Remove the cardboard L. With your other pie crust, cut about 4 strips and a few stars. Place them on top of the pie to resemble the flag.

Bake in the preheated oven for 35-40 minutes, or until crust is golden brown and insides bubbling.
