Chicken Tinga Tacos (Slow Cooker)


I love tacos. Any kind of tacos you can think of; fish, shrimp, chicken, beef, pork. The possibilities are endless for these little pockets of goodness. You can stick to traditional recipes, or create fantastic new combinations. This time, I decided to stick with a traditional recipe, but it was new to me. I found this recipe for Chicken Tinga Tacos, and they really caught my eye. Shredded chicken in a spicy, smoky, flavorful tomato sauce, served on crispy corn tortillas and creamy cotija cheese on top. Mmmm, what could be better? And boy, did they ever deliver! I ate these little tacos until I was so stuffed that I couldn’t take another bite. If you’ve never tried this classic Mexican favorite, then please do so. You won’t regret it!


Chicken Tinga Tacos

Serves 6-8

What You’ll Need:

+ 4 boneless chicken breast (about 2 pounds)

+ 1/2 teaspoon each chili powder, cumin, salt, and pepper

+ 1 Tablespoon olive oil

+ 1 medium onion, finely chopped

+ 3 garlic cloves

+ 28 ounce can diced tomatoes

+ 2 chipotles in adobo, from the can, coarsely chopped

+ 1 cup chicken broth

+Corn Tortillas

+Cotija Cheese

+ Other Great Garnishes are: Avocado, Scallions, Lettuce

Season the chicken breasts with the spice mixture of chili powder, cumin, salt, and pepper. Drizzle olive oil in the slow cooker. Place the chicken breast, onions, and garlic in, and set the slow cooker on high heat. Allow to cook for about 1 hour, and add in the diced tomatoes, chipotles, and chicken broth. Allow to cook and simmer for about 6 hours. Remove the chicken and shred with a fork (it should fall apart very easily). Add the chicken back into the sauce. The sauce should be thickened enough to coat the chicken. If it’s still a bit watery, remove the lid of the slow cooker so the sauce can reduce a bit. Heat the tortillas in the oven or grill them. Serve the tacos with cotija cheese and other garnishes.

Note: If you need to leave the slow cooker for the day, you can add all of the ingredients together in the beginning and allow to cook all day.
