This recipe has been one of my most highly requested recipe- and one of the most popular on my old blog/Pinterest. So, of course I had to share it again!! I still eat these all the time with great pleasure!
These muffins have become one of my favorite quick breakfasts and snacks. They’re packed with protein, fiber, and fairly low in sugar. They’re a whopping 200 calories per muffin, and they’ve got so many good, natural ingredients in them. PLUS they taste like dessert!
Speaking of dessert, these are also INCREDIBLE with Nutella spread on top. Oh yum!
Peanut Butter Banana Muffins
What You’ll Need:
+ 1 1/2 cups all purpose flour (you can use whole wheat if you’d like)
+ 2 Tablespoons ground flax seed
+ 1 teaspoon baking powder
+ 1 teaspoon baking soda
+ 1/2 teaspoon salt
+ 1/4 cup honey
+ 2 large eggs
+ 1/3 cup vegetable oil
+ 1 cup mashed ripe bananas
+ 1/2 cup chunky peanut butter
+ 1/4 cup sugar
+ 1 teaspoon vanilla extract
Preheat the oven to 400 degrees F.
Combine the flour, flax seed, baking powder, baking soda, and salt in a large bowl.
In a medium bowl, combine the remaining ingredients and whisk until smooth.
Add to the flour mixture. Pour into prepared muffin tins 3/4 of the way. Pop in the oven for 20 minutes, or until golden and a toothpick inserted in the center comes out clean.
Enjoy alone or with a dab of butter or nutella!
