Ah, my all time favorite cookie (which says a lot for a major cookie lover like myself). Chewy, a light crispyness on the outside, and full of creamy peanut butter and rich chocolate. Kind of like a ‘Reese’s’ cookie. Pure bliss. Be sure to have a glass of milk handy!
These are a favorite among my family, and I often make a big batch of these when someone (or myself) is feeling down or having a bad day/week and needs a pick me up. It seems to cheer things up a little bit. (Maybe it’s just me). Well, that was the case this week, so I figured I’d share the recipe with all of you. Maybe you know someone who could use a little piece of happiness this week.
Chewy Peanut Butter Choco- Chip Cookies
Makes about 35 cookies
What You’ll Need:
+ 2 cups all purpose flour
+ 1 teaspoon baking soda
+ 1/2 teaspoon salt
+ 1 stick unsalted butter (1/2 cup)
+ 1/2 cup peanut butter
+ 3/4 cup brown sugar
+ 3/4 cup white sugar
+ 2 eggs
+ 2 teaspoons maple syrup
+ 1 Tablespoon water
+ 2 teaspoons vanilla extract
+ 2 cups semi sweet chocolate chips
Preheat oven to 375 degrees F. In a large bowl, combine the flour, baking soda, and salt. Set aside. In an electric mixer, beat the butter, peanut butter, and sugars together. Add the eggs and maple syrup, along with the water and vanilla. Mix until thoroughly combined. Add the flour slowly. Stir in the chocolate chips. Drop by spoonfuls onto an ungreased baking sheet. Bake for 12-15 minutes, until golden brown but still soft.
