The “cookie dough” is packed with protein and fiber, and is the ultimate treat if you’re looking for a healthy snack. It will really satisfy your sweet tooth!
I know that chickpeas sound like a strange thing to pass off in this dish, but I dare you to serve some to an unsuspecting friend, they’ll never know that they are the secret ingredient. It tastes like it’s bad for you (in a good way), and it’s hard to resist eating more than a few scoops. This time, however, go ahead- indulge a little.
Chickpea Cookie Dough
What You’ll Need:
+ 1 (15oz) can chickpeas, drained + 2/3 cups brown sugar
+ 1/4 teaspoon salt + 1/4 cup milk (any kind- coconut is delish)
+ 4 teaspoons vanilla + 3 Tablespoons oats
+ 1/3 cup natural peanut butter + 1/2 teaspoon cinnamon
+ 1/4 cup water (filtered is best) + 1/3 cup chocolate chips
Mix all of the ingredients EXCEPT the chocolate chips in a food processor. Blend until quite thick and smooth.
Fold in the chocolate chips. Refrigerate for at least 1 hour.
Serve with fruit, crackers, or a couple of spoons.
