I bet you’re looking at this photo thinking…those crispy, golden gems are fresh from the fryer. But, you’d be wrong, oh-so wrong my friends. You see, you CAN make enticing, crispy, golden french fries, that are actually healthy! Sounds crazy, right?!Don’t let them fool you, though. They are mighty addicting. I’ve been known to hide them from everyone and eat an entire bowl all by myself…and then the rioting begins. No one can resist them!
These are one of my all time favorite snacks/sides. They pair perfectly with just about everything. You can easily customize the seasonings to your liking, but the parmesan and garlic combination is a total winner.
The secret to getting these fries extra crispy, is putting them on a wire rack on top of a baking sheet. It allows them to cook evenly from all sides and prevents any soggy-ness from excess water or oil.
Crispy Baked Parmesan Garlic Fries
What You’ll Need:
+ 2 large russet potatoes
+ 2 Tablespoons olive oil
+ 1/2 cup parmesan cheese
+ 1 Tablespoon garlic powder
+ 1 teaspoon thyme
+salt and pepper, to taste (about 1 tsp. each)
Preheat the oven to 425 degrees. Cut the potatoes into equal finger sized pieces. Add to a bowl and drizzle with olive oil. Add the spices, and place on a wire rack in an even layer. Place that on top of a cookie sheet. Bake in the oven for 25 minutes. Sprinkle with 1/4 cup parmesan cheese, and put them back in the oven for another 15 minutes. Once they’re out of the oven, sprinkle the remaining parmesan cheese on top, a sprinkle of salt, and serve.
