Walter’s White Cupcakes

This is a reblog from my old website. Since tonight is the final episode of Breaking Bad, I wanted to share my menu with you guys.

Blue Crystal Rock Candy      Blue Crystal Margaritas

Like most of you, I’m sure, Walt is my favorite character on Breaking Bad (okay, tied with Jesse). I wanted to make a cupcake that represented him in more ways than one. To start off with, I made a white cupcake batter after his last name. It is quite different than a vanilla/yellow cake batter. The flavor is almost like a sugar cookie, and the texture is a mix between a regular cupcake and angel food. SO delicious, and a bit lighter than a normal cupcake. I then prepared a buttercream frosting, dyed 1/4 of it blue, and frosted the cupcakes. For decoration, I used the blue frosting to create periodic table chemical elements in squares in the center of each cupcake. I then added a border of the crushed “Blue Crystal” rock candy.  Definitely not your ordinary cupcake, but I think it suits the show, and Walt, well.

PLEASE BE WARNED: Be careful biting into the cupcake with the rock candy on top. Don’t break a tooth. Just be sure to warn people when you serve them.

Walter’s White Cupcakes

Makes 24

What You’ll Need:

+ 2-3/4 cups all purpose flour                               + 1/2 cup unsalted butter

+ 3 teaspoons baking powder                                 + 1/4 cup shortening

+ 1-1/2 cups white granulated sugar                      + 1 teaspoon vanilla

+ 3/4 cup unsalted butter                                       + 4 cups powdered sugar

+ 4 egg whites                                                        + 2 to 4 tablespoons milk

+ 2 teaspoons vanilla

+ 1 cup milk

To make the cupcakes: Preheat oven to 350 degrees F. Combine flour, baking powder, and a pinch of salt in a medium bowl. In the electric mixer, beat butter. Add in sugar and beat until mixed well. Add in egg whites and vanilla. Alternate flour and milk into the butter mixture until all is combined. Evenly distribute the batter between 24 muffin cups. Bake for 18-20 minutes. Remove from pan and allow to cool.

Meanwhile, to make the frosting: Beat the butter and shortening in an electric mixer until light and fluffy. Beat in vanilla. Turn to low speed, and slowly add in the powdered sugar. Add milk and beat until smooth. Add more milk to reach your desired consistency. I placed most of the icing into a ziplock bag, and about 1/8 of it into a separate bag, adding blue dye to it. I use ziplock bags as piping bags. Convenient, and no mess to clean up! Just snip the end off of one side of the bag, the smaller you want your lines, the smaller cut you make!

Use the blue to form squares in the center of each cupcake. Write out different chemical elements from the periodic table.

Add some of the blue crystals to the border of each cupcake. And ENJOY!
