Sweet Potatoes are one of my all time favorite foods. It took me a while to adjust to them-when I was younger I never ate them (aside from Thanksgiving when the yams were covered in marshmallows). Now, I buy a bag of them almost every time I go to the supermarket. They’re SO good for you, they compliment a variety of different meals, and they’re very versatile. You can work with their slight sweetness and make them even sweeter with some brown sugar or drizzle of honey, or you can balance out the sweet with some spicy cayenne or smoky cumin. One of my FAVORITE ways to eat them, however, is with a simple drizzle of olive oil, salt, and pepper. Simple, yet the flavors are so complex. Make them into potato chips, and they’re incredible!
Baked Sweet Potato Chips
Makes about 1 cup per potato
What You’ll Need:
+ 3-4 sweet potatoes, washed thoroughly
+ 2 Tablespoons extra virgin olive oil
+ Salt and Pepper (about 1/2 teaspoon each)
Preheat oven to 400 degrees F.
Be sure to scrub the potatoes to remove any dirt and debris. I leave the skin on because I like it, but you can peel them if you prefer. Using a mandolin, slice the poatoes into thin slices.
I like to give them another rinse to remove any extra starch, and then get them really dry. You can use a salad spinner to remove excess water.
Line a baking sheet with tin foil, and arrange the potatoes in a single layer on the sheet. Drizzle with olive oil, and sprinkle with salt and pepper.
Bake in the preheated oven for about 35-40 minutes, turning once half way through cooking. They should get crispy and delicious!
Why Cook These From Scratch?: You can most certainly find healthy bags of sweet potato chips that are natural in the supermarket. However, they can be quite pricey. To Make this recipe, it’s cost me $2.05. To buy this amount of good quality sweet potato chips packaged in the store, it would cost you $17-$20. Talk about savings! Plus, you can customize these in any flavor you want! It’s Fresh AND Fun!!
